Easy Cheese Sauce

This is ridiculously easy to make. Have it as it is or add Dijon or English Mustard, a scattering of thyme leaves. Enjoy it over Savoy Cabbage Ribbons, Green Beans, Cabbage Pezzi or with steamed or roast cauliflower. Use it anywhere you would normally have cheese sauce. However it is filling and high in fat so usually you need less of it than a traditional cheese sauce made with flour and milk.

Ingredients - Serves 2

50 g (2 oz) mature hard cheese such as Pecorino, Manchego or Parmesan, finely grated

100 ml (31/2 fl oz/scant 1/2 cup) cream

 

Heat the cheese and cream together in a small pan over a very low heat for 5 minutes stirring frequently. Use straight away if you need a runny cream or continue to heat until it reduces and thickens to your liking. Serve directly from the pan or leave to cool and reheat later as you need it.
