Ginger Juice

Although you can buy small bottles of “ginger shots” they are mainly apple juice which is very high in sugar. We all love this no-sugar version and enjoy showing our friends how easy it is to make. There is always a bottle in our fridge. It is great for no-booze nights as it still has a kick from the heat of the ginger rather than from alcohol

Ingredients - Serves 10

Makes 450ml ginger juice
Enough for 10 long sparkling ginger drinks

200g fresh ginger, peeled
350ml water

Whizz the ginger and water together in a blender until there are no more lumps. Strain the juice through a fine sieve into a jug.

Squeeze out every last drop of moisture from the pulp using your hand. Discard the fibrous ginger left in the sieve.

Pour the juice into a clean bottle or glass jar and store in the fridge for up to a week.

Ginger, Lime and Mint Sparkle

This is my go-to summer drink. I love it so much I take a small bottle out with me as I know it isn’t commercially available (yet!). It is so much better in every way than most soft drinks that are full of sugar or sweeteners. Enjoy it as it is as a mocktail or add 50cl of white or dark rum to make a rum and ginger cocktail.

 

Serves 1

 

1 lime wedge

A sprig of mint

3 tablespoons ginger juice

250ml sparkling water

 

Muddle the lime and mint together in a glass to release the aromatics from them. Add a large ice cube (hyperlink to these ice cube trays on Amazon)  (I love these as they don’t dilute the drink too much) or a handful of ice and the ginger juice, followed by the water. Add more lime or ginger as necessary to taste. Serve straight away.
