Soft Boiled Eggs

These are an excellent snack as not only are eggs portable in their boiled form but also filling, zero carbs and if you care about calories only 79kcal each. It appears now that there is no evidence to link dietary cholesterol such as that found in eggs to the cholesterol in our blood so eggs are firmly back on the menu and a big part of a low-carb lifestyle.
I like my eggs warm and soft-boiled with salt and pepper but you can also try them with hot sauce, especially one that isn’t sugary. We like Frank’s Hot Sauce or a good Siracha.
Ingredients - Serves 4
Good quality free range eggs – ideally from a local farm shop or small holder
