Super Quick Tomato Sauce

After years of not daring to alter Italian recipes from whichever mamma gave them to me I have finally relented and changed this way of cooking a sauce, only when time is short.
The Super Quick Italian Tomato Sauce is very good if the tomato sauce is going to be cooked again such as in low-carb lasagne, Aubergine Parmigiana or with the Eggs in Tomato Sauce.
Ingredients - Serves 6
2 x 400g tins of Italian plum tomatoes
1 red onion, finely chopped
5 tablespoon extra virgin olive oil
½ teaspoon salt
freshly ground black pepper
1 garlic clove, lightly crushed
Put all the ingredients together in a large frying pan and use a potato masher to break up the tomatoes. Bring it to the boil then lower the heat so the sauce is bubbling rapidly.
Cook for 15 minutes stirring frequently until the onions have softened and you are happy with the consistency.
