Vanilla Custard

We have calculated the carbs on cow’s milk but if you use almond milk you will save around 3g of carbs per portion as whole milk contains lactose. For ease or if you can’t eat egg you can use ready-made custard powder but make sure there is no added sugar.
Ingredients - Serves 8
1 tablespoon honey or maple syrup
500ml cow’s or almond milk
4 medium egg yolks
2 teaspoons of vanilla extract
2 (15g/ ½ oz) heaped tablespoons cornflour
Put all of the ingredients into a medium saucepan (off the heat) and use a whisk to combine them together thoroughly. Now switch on the heat to medium hot and continue to whisk until the mixture thickens. Let it bubble gently while whisking for a couple of minutes to cook the eggs thoroughly and remove from the heat.
