David’s Story

I was diagnosed with Diabetes Type 2 in November 2000. I immediately investigated what I should and should not be eating. I was given a “diet sheet” by my GP, and also joined Diabetes UK. After a month, it became obvious to me that following the prescribed diet was not helping. I had learned about carbohydrates and how they are converted to sugars, so it surprised me that both the diet sheet and Diabetes UK advocated such a high percentage of carbohydrate-based foods in their diet advice. So I decided to cut them out altogether. No sugar; no potatoes; no rice; no pasta. It didn’t take very long before my blood-sugar readings dropped through the floor. It also didn’t take very long before I was bored stupid by my new restrictive diet. Since then, I have striven to find a happy medium, but all of the time, I found myself backsliding because I craved BREAD. I became hooked on Ciabatta rolls, thinking that they were healthier. But they were not. So my blood sugars and my weight yoyo-ed up and down all of the time.
Then in March this year, 12th to be precise, a recipe appeared in my daily newspaper for what was called a “Country Style Loaf”. It was a flour and yeast free bread. I gave it a try, and it was delicious. The only problem I had was that the slices were far too small. So I experimented, and eventually managed to produce a somewhat larger loaf, baked in an earthenware oven brick. I was so pleased with myself that I contact Katie Caldesi to show her what I had achieved. Yes, alright, I was showing off! Anyway, Katie very graciously replied, and suggested that I try another recipe, this one for a Seed and Nut Loaf. The recipe was from Sarah Britton, again a flour and yeast free bread. I tried it, and again, it was delicious, but for my purposes too small (I like to have an open sandwich for my lunch). So I again experimented, and eventually produced a 3 lb loaf (about a 1.4 kg). I am over the moon!, and even better, my partner loves both of these new loaves too.
The big bonus to these discoveries has been that my blood sugar has stabilized, my weight is still dropping, I do not feel bloated after eating, and I do not crave bread or in fact “cakes” anymore.
So I am deeply indebted to Katie Caldesi and Sarah Britton for changing my eating habits, and my way of life.
