What If I’m Not Overweight?

Although the consequence of eating processed and refined carbohydrates for many is weight gain, the slim amongst us are not automatically immune. The first place that fat accumulates is around the middle ie: close to the liver. You don’t need to be overweight to have high levels of internal fat – so some people can be slim and diabetic.

You may have heard of the acronym TOFI – Thin on the Outside, Fat on the Inside – where visceral fat builds up in the abdomen and around organs like the heart even when bodyweight is in the normal range.
